My first bake of the year has been testing this cinnamon roll streusel-topped apple cake! 🍎 This is test 3 & is definitely my neatest so far 😬 Now I’ve just gotta wait for it to cool before I can slice it - always the hardest part 😩

Cranberry & Nut Challah. (AD) Soft, cloud-like and a lil bit sweet – this vegan cranberry & nut challah is one to tear & share (or slice and turn into the BEST French toast for Christmas day breakfast). I always try to pack my breads with mix-ins so I used as many @crazyjackorganic dried cranberries, walnuts and almonds, as I could fit in! 🍒🌰Crazy Jack are driven by a passion for sourcing the very best in organic food, producing a range of dried fruit and nuts grown as nature intended. I used the tangzhong method (pre-cooking a small amount of flour & water to make a paste which is included in the dough) which gives such an amazingly fluffy texture to eggless breads like this☁️☁️. (AD) It is definitely the season for baking ALL the delicious & pretty things now! I made this chocolate @jus_rol puff pastry wreath, decorated with candied citrus, cranberries & leaves for an easy bake to get me in the festive spirit! 🎄❄️🙋🏼‍♀️I based the recipe on the pull apart christmas tree recipe on the Jus-Rol website, adding odds & ends of nuts and dried cranberries to the filling 🌰🍫🍒.
To see how I shaped it, I've got a video a few posts back in my feed showing how I did it. It looks impressive but I promise is mostly an assembly job - perfect for this busy time of year.
